Thirty Minute Meatloaf

When I first started cooking from scratch, I didn’t have kids.  I would spend an hour and a half almost every night cooking foods for my husband and me, and then cleaning up.  The thought of doing that literally cracks me up now! I can’t believe I ever had that much time!

Once kids entered the picture, I quickly realized that I had to make some changes if we were going to continue eating Maker’s Diet foods from scratch 3-5 x a day. 

Since necessity is the mother of invention, I’ve developed a whole bunch of recipes that are easy to make, in 30 minutes or less, without compromising on quality whatsoever.  When I can have hubby watch the kids, I enjoy cooking for longer periods of time, but most nights, the 30 minute rule applies around our house!

Here’s one of our family’s favorite recipes- meat loaf, made with high quality organic, grass fed beef. 

I think meatloaf is the ultimate comfort dish, and this dish tastes delicious served with warm mashed potatoes or even brown rice.  Made using organic, grass fed & grass finished beef, this dish is high in cancer preventing, heart healthy, and body slimming CLA!

Thirty Minute Meatloaf

Serves 4.

Ingredients:

2 lbs organic grass fed, grass finished ground beef
1 organic green bell pepper, diced
1 small organic onion, diced
1 8 oz. jar organic tomato paste
2 small organic carrots, diced
1 stick organic celery, cut into small pieces
½ teaspoon organic worcestshire sauce
½ teaspoon Himalayan or sea salt
½ cup sourdough or sprouted bread crumbs
1 organic egg
½ cup organic ketchup
1 tbsp organic mustard

4 oz. organic tomato paste

Directions:
In a mixing bowl, combine all ingredients well, adding the egg last.

Form into a loaf and cook at 400 for 30-35 minutes, or 350 for 40-45 minutes, or until done.

 In a separate bowl, combine ½ cup organic ketchup, 1 tbsp organic mustard, and 4 oz. organic tomato paste, and pour over the top of the meatloaf.

Top with 1 cup of grated organic really raw cheese, and serve.  Enjoy!
