Our family loves eating pancakes, but I (don’t really enjoy) standing over the stove flipping pancakes in the morning. So I love making these pancakes that you pop right in the oven! They’re so easy to make and my kids call them “brownie pancakes” even though they’re the same as pancakes you would make on the stovetop. I often make a double batch and the kids eat them for snacks later in the day, or I just mix together the dry ingredients and store in a freezer bag to use for another time.
I got this recipe here, but adapted it to include organic sprouted grains and spices.
3 Tablespoons organic evaporated cane juice or organic coconut sugar
2 cups organic sprouted spelt flour or organic sprouted whole wheat flour or organic sprouted khorasan flour
3 teaspoons aluminum free baking powder such as Rumford’s
1/2 teaspoon sea salt
1 1/2 cups organic raw milk
2 – 4 tablespoons organic butter, melted
2 organic eggs
1 teaspoon organic vanilla
2 teaspoons organic cinnamon
Preheat oven to 350 degrees. Grease a 9×13 baking dish with organic coconut oil or organic butter.
In a medium bowl, combine the sugar, flour, baking powder, and salt.
In a large bowl whisk together the milk, eggs, melted butter. Then stir the flour mixture into the milk mixture, just until combined.
Pour the batter into the prepared pan and bake for 25-30 minutes, until edges are golden brown and a knife or toothpick inserted in the center comes out clean.
Let it cool, then cut into squares.
We like to top it with organic powdered sugar, or organic maple syrup.
