When I don’t know what to make for dinner…I make waffles :)

When I get too busy and too tired to make dinner at night, I have a few tricks up my sleeve. One is organic homemade quesadillas. Another is breakfast for dinner. Particularly waffles πŸ™‚

My kids and husband LOVE waffles and they’re so easy to make. This recipe is designed to be soaked overnight, but, in a crisis, I make it without soaking πŸ™‚ I triple the recipe to make a large batch.

This recipe can also be used to make pancakes. So take your pick- pour it right in a waffle iron, or make pancakes with the batter instead.

Blender Batter Waffles:

Here is the recipe: (Single batch, I typically triple it for a family of 5)

1 cup buttermilk (use organic raw milk and add a couple drops of lemon essential oil to curdle it, or use genuien organic raw buttermilk)
1 Tbsp coconut oil
1/2 cup organic oats
1/2 cup organic brown rice (or wheat berries, or millet, or barley)

Place in blender and blend for 3 minutes – let sit on your counter overnight.

If you are making these in a crunch, skip the overnight step and add the ingredients below right away:

Next Morning:

Add:
1 egg
1 Tbsp flaxseed
1/4 t baking soda
1/2 t salt
1 tspn. baking powder (I recommend Rumford’s Aluminum Free)

Blend for 3 -5 minutes. Now it’s ready to use! If it seems too thick, just add a bit more milk.

Whip it up into pancakes or pour into a hot waffle iron and enjoy with plenty of organic butter and organic maple syrup on top! YUM!
