Why I Love My Instant Pot

I love my Instant Pot because it’s everything I’ve been looking for in a kitchen helper for a long, long time. It does everything. And by everything, I do mean EVERYTHING. Including being able to go in the dishwasher. The Instant Pot provides essentially the functionality of the stovetop with the ease and convenience of the slow cooker. When I don’t know what to make for dinner…I make waffles :)

When I get too busy and too tired to make dinner at night, I have a few tricks up my sleeve. One is organic homemade quesadillas. Another is breakfast for dinner. Particularly waffles 🙂 My kids and husband LOVE waffles and they’re so easy to make. This recipe is designed to be soaked overnight, but, in a crisis, I make it without soaking 🙂 I triple the recipe to make a large batch. This recipe can also be used to make pancakes.
